Ingredients

- 2 cups mashed sweet potatoes
- 1/2 cup cocoa powder
- 1/2 cup maple syrup or honey
- 1/2 cup almond butter (or another nut butter)
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the sweet potatoes by cooking them until tender and mashing them well.
- Mix the wet ingredients in a large bowl: sweet potatoes, almond butter, maple syrup (or honey), eggs, and vanilla extract.
- Combine the dry ingredients in another bowl: cocoa powder, baking soda, and salt.
- Mix the dry ingredients into the wet mixture gently until combined.
- Pour the batter into a greased 9-inch round cake pan.
- Bake for 25-30 minutes, or until a toothpick comes out clean from the center.
- Cool the cake in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
Serve with powdered sugar, melted dark chocolate drizzle, Greek yogurt or coconut whipped cream, and fresh fruit.
