Description

A delightful and moist chocolate cake made with sweet potatoes, bringing back joyful childhood memories.


Ingredients

  • 2 cups mashed sweet potatoes
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup or honey
  • 1/2 cup almond butter (or another nut butter)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the sweet potatoes by cooking them until tender and mashing them well.
  3. Mix the wet ingredients in a large bowl: sweet potatoes, almond butter, maple syrup (or honey), eggs, and vanilla extract.
  4. Combine the dry ingredients in another bowl: cocoa powder, baking soda, and salt.
  5. Mix the dry ingredients into the wet mixture gently until combined.
  6. Pour the batter into a greased 9-inch round cake pan.
  7. Bake for 25-30 minutes, or until a toothpick comes out clean from the center.
  8. Cool the cake in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

Serve with powdered sugar, melted dark chocolate drizzle, Greek yogurt or coconut whipped cream, and fresh fruit.
