Ingredients

- 1/3 cup Coconut Sugar
- 2/3 cup Almond Flour
- 1 1/2 teaspoon Ground Cinnamon
- 1/4 teaspoon Fine Grain Sea Salt
- 3 tablespoons Avocado Oil
- 2 cups Almond Flour (additional)
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Fine Grain Sea Salt (additional)
- 4 Eggs
- 2/3 cup Maple Syrup
- 1 1/2 teaspoon Vanilla Extract
- 1/2 cup Greek Yogurt (or 1/4 cup Olive Oil for Dairy-Free)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- Mix together the coconut sugar, almond flour, ground cinnamon, fine grain sea salt, baking powder, and baking soda.
- Add in the avocado oil, eggs, maple syrup, vanilla extract, and Greek yogurt (or olive oil) and mix until just combined.
- Fold in the additional almond flour carefully.
- Transfer the batter into the greased baking dish and spread evenly.
- Bake for 30-35 minutes, or until the edges are golden and a toothpick comes out clean.
- Cool for about 10 minutes before transferring to a wire rack.
- Slice and serve warm with your favorite drink.
Notes
Optional toppings: coconut whipped cream or fresh berries. Store leftovers in an airtight container in the refrigerator for up to a week.
