A healthy, grain-free coffee cake that mimics the traditional Starbucks favorite, bursting with flavor and perfect for cozy mornings.


Ingredients

  • 1/3 cup Coconut Sugar
  • 2/3 cup Almond Flour
  • 1 1/2 teaspoon Ground Cinnamon
  • 1/4 teaspoon Fine Grain Sea Salt
  • 3 tablespoons Avocado Oil
  • 2 cups Almond Flour (additional)
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Fine Grain Sea Salt (additional)
  • 4 Eggs
  • 2/3 cup Maple Syrup
  • 1 1/2 teaspoon Vanilla Extract
  • 1/2 cup Greek Yogurt (or 1/4 cup Olive Oil for Dairy-Free)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. Mix together the coconut sugar, almond flour, ground cinnamon, fine grain sea salt, baking powder, and baking soda.
  3. Add in the avocado oil, eggs, maple syrup, vanilla extract, and Greek yogurt (or olive oil) and mix until just combined.
  4. Fold in the additional almond flour carefully.
  5. Transfer the batter into the greased baking dish and spread evenly.
  6. Bake for 30-35 minutes, or until the edges are golden and a toothpick comes out clean.
  7. Cool for about 10 minutes before transferring to a wire rack.
  8. Slice and serve warm with your favorite drink.

Notes

Optional toppings: coconut whipped cream or fresh berries. Store leftovers in an airtight container in the refrigerator for up to a week.
