A cozy and delicious Healthy Oatmeal Apple Cake made with rolled oats and fresh apples, naturally sweetened for a wholesome dessert.

- 2 cups rolled oats
- 1 ½ cups unsweetened applesauce
- 1 cup grated apples (about 2 medium apples)
- ½ cup maple syrup or honey
- ¼ cup coconut oil, melted
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- Optional: Nuts or raisins for added texture
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Combine the rolled oats, baking powder, baking soda, cinnamon, and salt in a mixing bowl.
- Mix the applesauce, grated apples, coconut oil, maple syrup or honey, and vanilla extract in another bowl.
- Pour the wet mixture into the dry mixture and gently fold them together.
- Add nuts or raisins if using, being careful to avoid crushing the mixture.
- Transfer the batter into the prepared baking pan and spread evenly.
- Bake for about 30-35 minutes or until golden and a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For meal prep, this cake keeps well in the fridge for up to a week and freezes nicely. Serve with almond butter or Greek yogurt for added creaminess.
