Ingredients

  • 1 ½ cups unsweetened applesauce
  • 1 cup grated apples (about 2 medium apples)
  • ½ cup maple syrup or honey
  • ¼ cup coconut oil, melted
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: Nuts or raisins for added texture

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Combine the rolled oats, baking powder, baking soda, cinnamon, and salt in a mixing bowl.
  3. Mix the applesauce, grated apples, coconut oil, maple syrup or honey, and vanilla extract in another bowl.
  4. Pour the wet mixture into the dry mixture and gently fold them together.
  5. Add nuts or raisins if using, being careful to avoid crushing the mixture.
  6. Transfer the batter into the prepared baking pan and spread evenly.
  7. Bake for about 30-35 minutes or until golden and a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.
