4 yellow onions, thinly sliced

4 tbsp avocado oil

2 tsp salt

2 tsp dried thyme

4 tbsp balsamic vinegar

4 cloves garlic, minced

2 tbsp Worcestershire sauce

4 cups plain Greek yogurt

Freshly cracked black pepper, to taste

Optional: 1 tsp smoked paprika or caramelized shallots for extra depth

Garnish: chopped chives or parsley


Instructions

Caramelize the onions: Heat avocado oil in a large skillet over medium-low heat. Add onions and salt, cooking low and slow for 20–25 minutes until golden and soft, stirring occasionally.

Flavor boost: Stir in thyme, garlic, and balsamic vinegar. Cook for 2–3 more minutes until fragrant and sticky.

Mix the base: In a large bowl, combine Greek yogurt, Worcestershire sauce, pepper, and optional paprika or shallots.

Combine: Once onions are cool, fold into the yogurt mixture. Taste and adjust seasoning as needed.
