- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 cup unsweetened applesauce
- 1/4 cup melted coconut oil
- 1/3 cup coconut sugar
- 1 teaspoon vanilla extract
- 1/4 cup milk (dairy or non-dairy)
- Additional 1/4 cup coconut sugar and 1 tablespoon cinnamon (for coating)
Instructions
- Preheat the oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the whole wheat flour, baking powder, cinnamon, and a pinch of salt.
- In another bowl, mix the applesauce, melted coconut oil, coconut sugar, vanilla extract, and milk until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Form 24 small balls (about 1-inch diameter) and space them evenly on the baking sheet.
- Bake for 12-15 minutes, or until lightly golden.
- Mix the additional coconut sugar and cinnamon. Roll the warm bites in the cinnamon sugar mixture.
- Allow to cool briefly on a wire rack and serve warm.
Notes
Serve with yogurt or a drizzle of honey for extra sweetness. These churro bites can be stored in an airtight container and are freezer-friendly.
