Description

Delicious baked churro bites that satisfy your sweet tooth without the guilt. Soft on the inside and crispy on the outside, these bites are a healthier twist on a classic treat.


Ingredients

  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsweetened applesauce
  • 1/4 cup melted coconut oil
  • 1/3 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk (dairy or non-dairy)
  • Additional 1/4 cup coconut sugar and 1 tablespoon cinnamon (for coating)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, whisk together the whole wheat flour, baking powder, cinnamon, and a pinch of salt.
  4. In another bowl, mix the applesauce, melted coconut oil, coconut sugar, vanilla extract, and milk until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Form 24 small balls (about 1-inch diameter) and space them evenly on the baking sheet.
  7. Bake for 12-15 minutes, or until lightly golden.
  8. Mix the additional coconut sugar and cinnamon. Roll the warm bites in the cinnamon sugar mixture.
  9. Allow to cool briefly on a wire rack and serve warm.

Notes

Serve with yogurt or a drizzle of honey for extra sweetness. These churro bites can be stored in an airtight container and are freezer-friendly.
