Ingredients

Scale
  • For the salad:
  • 2 cups cooked chicken breast, shredded or chopped
  • 2 cups shredded napa or green cabbage
  • 1 cup shredded purple cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1/2 cup edamame (shelled and cooked)
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced almonds or chopped peanuts (optional)
  • For the sesame dressing:
  • 3 tbsp rice vinegar
  • 1 tbsp soy sauce or tamari
  • 1 tbsp sesame oil
  • 1 tbsp olive oil or avocado oil
  • 1 tbsp honey or maple syrup
  • 1 tsp fresh ginger, grated
  • 1 garlic clove, minced
  • 1 tsp sriracha or chili sauce (optional)

Instructions

  1. In a large bowl, combine cooked chicken, shredded cabbage, carrots, bell pepper, edamame, green onions, and cilantro.
  2. In a small bowl or jar, whisk together all dressing ingredients until smooth and emulsified.
  3. Pour the dressing over the salad and toss to coat evenly.
  4. Sprinkle with almonds or peanuts before serving for added crunch.
  5. Serve immediately or chill for 15–30 minutes for best flavor.

Notes

  • Use rotisserie chicken or leftover grilled chicken for convenience.
  • Substitute sunflower seeds or cashews for a nut-free option.
  • Make it vegan by using tofu or tempeh instead of chicken and maple syrup instead of honey.
  • Store leftovers in an airtight container for up to 3 days.
  • Dressing can be made ahead and stored separately.
