- 1 medium onion, chopped

- 2 celery ribs, sliced
- 1 can (14.5 oz) diced tomatoes
- 6 cups beef broth
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1 1/2 cups uncooked elbow macaroni
Instructions
- In a large pot over medium heat, cook ground beef until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add chopped onion, garlic, carrots, and celery. Cook for 5–6 minutes until vegetables begin to soften.
- Stir in diced tomatoes, beef broth, Italian seasoning, paprika, salt, and pepper. Bring to a boil.
- Add uncooked macaroni and reduce heat to a simmer. Cook for 10–12 minutes, or until pasta is tender.
- Taste and adjust seasoning as needed. Serve hot.
Notes
- For extra flavor, add a splash of Worcestershire sauce or hot sauce.
- Use whole wheat or gluten-free macaroni to suit dietary needs.
- Leftovers will thicken as the pasta absorbs liquid—add extra broth when reheating.
