Ingredients

2 salmon fillets, grilled and cubed

2 cups cooked brown rice

2 cups fresh arugula

1 ripe avocado, diced

2 tbsp spicy mayo (mix 2 tbsp mayo + 1 tsp sriracha)


Instructions

Grill the salmon: Season with salt, pepper, and a touch of olive oil. Grill or pan-sear until just cooked through. Cube into bite-sized pieces.
