- 2 Chicken Breasts
- 1 Cup Corn (fresh or frozen)
- 1 Cup Black Beans (canned, rinsed, and drained)
- 1 Avocado, diced
- 4 Cups Mixed Greens
- 1/2 Cup Cherry Tomatoes, halved
- 1/4 Cup Red Onion, thinly sliced
- Salt and Pepper to taste
- 1 Tablespoon Olive Oil
- 1 Cup Homemade Ranch Dressing
Instructions
- Preheat your grill or grill pan over medium heat. Season the chicken breasts with salt, pepper, and olive oil. Let them marinate for 15-20 minutes if possible.
- Grill the chicken for 6-8 minutes on each side until cooked through (internal temperature of 165°F).
- In a medium bowl, combine sour cream, mayonnaise, lemon juice, garlic powder, onion powder, salt, and pepper to make the ranch dressing. Stir until creamy.
- In a large bowl, combine mixed greens, corn, black beans, cherry tomatoes, and avocado.
- Slice the grilled chicken and add to the salad, drizzle with ranch dressing, and gently toss to combine.
- Transfer the salad to serving bowls and add more ranch on top before serving.
Notes
Feel free to customize the salad with your favorite vegetables, add grains for more texture, or substitute chicken with tofu for a vegetarian option.
