Ingredients

  • 12 oz fettuccine
  • Salt (for boiling water)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 4 cups fresh spinach (chopped)
  • 1 cup heavy cream (or coconut milk)
  • 1/2 cup Parmesan cheese (grated)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Pinch of nutmeg (optional)
  • 1 tbsp lemon juice
  • 1 cup green peas (fresh or frozen)
  • 1 bunch green asparagus (trimmed and cut into 2-inch pieces)
  • 2 tbsp fresh basil (chopped)
  • 2 tbsp pine nuts or slivered almonds (toasted)
  • Extra Parmesan or lemon zest (optional)

Instructions

  1. Cook the Pasta: In a large pot, fill with water and salt it. Bring to a boil. Add your fettuccine and cook until al dente—about 8-10 minutes. Reserve about a cup of pasta water before draining!
  2. Sauté the Vegetables: Heat the olive oil in a large skillet. Add garlic and sauté for 30 seconds until fragrant. Add spinach and cook until wilted—about 2-3 minutes.
  3. Create the Creamy Sauce: Pour in heavy cream (or coconut milk) and add grated Parmesan. Stir over low heat until well combined. Add reserved pasta water if it’s too thick. Season with salt, pepper, nutmeg, and lemon juice.
  4. Add in the Veggies: Add cooked pasta, green peas, and asparagus to the skillet. Fold everything together gently.
  5. Finish with Herbs and Nuts: Sprinkle chopped fresh basil and toasted nuts right at the end.
  6. Serve and Enjoy: Plate the pasta, and top with extra Parmesan and lemon zest for brightness.
