- 1 lb ground beef or lamb
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 egg
- Salt and pepper to taste
- 1 cup cooked quinoa or rice
- 1 cup diced cucumbers
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup tzatziki sauce
Instructions
- Mix the ground beef or lamb with breadcrumbs, Parmesan cheese, parsley, minced garlic, oregano, egg, salt, and pepper in a large mixing bowl.
- Shape the mixture into 1.5-inch meatballs using your hands.
- Cook the meatballs in a large skillet with olive oil over medium heat for about 5–7 minutes on each side.
- Prepare quinoa or rice according to package instructions.
- Dice cucumbers, halve cherry tomatoes, and chop red onion while the meatballs are cooking.
- Assemble the bowl by starting with quinoa or rice, adding meatballs, veggies, and tzatziki sauce on top.
Notes
For perfectly tender meatballs, avoid overmixing. Serve with warm pita bread or a green salad.
