Description

A delightful Greek Meatball Bowl that combines juicy meatballs with fresh veggies, quinoa or rice, and creamy tzatziki, perfect for a comforting meal.


Ingredients

  • 1 lb ground beef or lamb
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 egg
  • Salt and pepper to taste
  • 1 cup cooked quinoa or rice
  • 1 cup diced cucumbers
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup tzatziki sauce

Instructions

  1. Mix the ground beef or lamb with breadcrumbs, Parmesan cheese, parsley, minced garlic, oregano, egg, salt, and pepper in a large mixing bowl.
  2. Shape the mixture into 1.5-inch meatballs using your hands.
  3. Cook the meatballs in a large skillet with olive oil over medium heat for about 5–7 minutes on each side.
  4. Prepare quinoa or rice according to package instructions.
  5. Dice cucumbers, halve cherry tomatoes, and chop red onion while the meatballs are cooking.
  6. Assemble the bowl by starting with quinoa or rice, adding meatballs, veggies, and tzatziki sauce on top.

Notes

For perfectly tender meatballs, avoid overmixing. Serve with warm pita bread or a green salad.
