Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Prep Your Veggies: Rinse the chickpeas under cold water. Halve the cherry tomatoes, dice the cucumber, and finely chop the red onion.
  2. Combine the Base: In a large bowl, toss the chickpeas, cherry tomatoes, cucumber, red onion, and olives.
