- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, pitted and sliced
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Prep Your Veggies: Rinse the chickpeas under cold water. Halve the cherry tomatoes, dice the cucumber, and finely chop the red onion.
