Ingredients

  • 1 lb chicken breast, diced
  • 2 cups cooked quinoa or brown rice
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 2 cups mixed greens
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a mixing bowl, toss chicken with garlic, olive oil, lemon juice, salt, and pepper; marinate for 20-30 minutes.
  2. Cook quinoa or brown rice according to package instructions.
  3. Heat a skillet over medium-high heat; cook marinated chicken for 6-8 minutes until golden brown.
  4. Dicer cucumber, bell pepper, and halve cherry tomatoes while chicken cooks.
  5. Combine Greek yogurt, minced garlic, salt, and lemon juice in a small bowl to make the sauce.
  6. Assemble bowls with quinoa or rice, chicken, veggies, and mixed greens.
  7. Drizzle with garlic yogurt sauce and garnish with fresh herbs before serving.
