- 2 lbs russet or Yukon gold potatoes, thinly sliced
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 tsp fresh thyme (or 1/2 tsp dried)
- 1/2 tsp fresh rosemary, chopped (or 1/4 tsp dried)
- 1 1/2 cups heavy cream
- 1/2 cup whole milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1 1/2 cups shredded Gruyère cheese
- 1 cup shredded sharp cheddar cheese
- Optional: chopped parsley for garnish
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a saucepan, melt butter over medium heat. Add garlic, thyme, and rosemary; cook for 1 minute until fragrant.
- Stir in cream, milk, salt, and pepper. Heat until just simmering, then remove from heat.
- Arrange half of the sliced potatoes in the prepared dish. Pour half the cream mixture over them and sprinkle with half the cheeses.
- Repeat with remaining potatoes, cream, and cheese.
- Cover with foil and bake for 40 minutes. Uncover and bake for another 20–25 minutes until top is golden and bubbly.
- Let rest for 10 minutes before serving. Garnish with chopped parsley if desired.
Notes
- Use a mandoline slicer for even, thin potato slices.
- Gruyère adds depth, but Swiss or mozzarella can be substituted.
- Make ahead by assembling the dish and refrigerating up to 24 hours before baking.
- Add a pinch of nutmeg to the cream for extra warmth and flavor.
