Description

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with liners or grease lightly.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, ginger, cinnamon, and cloves.
  3. In another bowl, whisk together brown sugar, molasses, milk, oil, eggs, and vanilla until smooth.
  4. Pour wet ingredients into dry ingredients and stir until just combined—do not overmix.
  5. Divide batter evenly among muffin cups, filling about 3/4 full.
  6. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

  • Add a simple glaze or sprinkle with powdered sugar for a festive finish.
  • Chopped crystallized ginger or nuts can be mixed in for extra texture.
