  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/3 cup unsulphured molasses
  • 2 large eggs
  • 1 tsp vanilla extract
  • For the Eggnog Frosting:
  • 4 oz cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • 2 tbsp eggnog
  • 1/2 tsp nutmeg
  • 1 1/2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease well.
  2. In a medium bowl, whisk together flour, baking powder, salt, ginger, cinnamon, cloves, and nutmeg.
  3. In a large bowl, whisk together melted butter, brown sugar, granulated sugar, molasses, eggs, and vanilla until smooth.
  4. Stir dry ingredients into the wet mixture until just combined.
  5. Pour batter into prepared pan and spread evenly. Bake for 25–30 minutes, or until a toothpick comes out with moist crumbs.
  6. Cool completely before frosting.
  7. For the frosting, beat cream cheese and butter until smooth. Add eggnog and nutmeg, then beat in powdered sugar until fluffy and spreadable.
  8. Frost cooled brownies, slice, and serve. Store leftovers in the fridge.
