- 4 ounces stale bread, torn or thinly sliced
- 1 tablespoon smoked paprika (pimentón)
- 6 to 7 cups chicken stock or vegetable broth
- 4 large eggs, whisked
- Fine sea salt and freshly ground black pepper, to taste
Instructions
- Sauté the garlic: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced garlic and stir gently to prevent burning, cooking until golden (about 2-3 minutes).
- Add bread and paprika: Toss in the torn bread and sprinkle in the smoked paprika, stirring for another minute.
- Pour in the broth: Slowly add the chicken stock or vegetable broth and bring to a gentle simmer for about 15-20 minutes.
- Whisk in the eggs: Stir in the whisked eggs while gently swirling to create threads, and let it simmer for another 5 minutes.
- Season and serve: Adjust salt and pepper to taste, serve in bowls, and drizzle with olive oil if desired.
