Description

Ingredients

  • 3 lbs russet or Yukon Gold potatoes, peeled and cut into chunks
  • 1 head garlic
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • ¾ cup heavy cream (or half-and-half)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: chopped fresh chives or parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30–35 minutes until cloves are soft and golden.
  2. Meanwhile, place potatoes in a large pot of salted water. Bring to a boil and cook 15–20 minutes, until fork-tender. Drain well.
  3. In a saucepan, warm the butter and cream over low heat until melted and heated through.
  4. Squeeze the roasted garlic cloves from their skins and mash them into the potatoes.
  5. Use a potato masher or hand mixer to mash potatoes, slowly adding the warm cream-butter mixture until smooth and fluffy.
  6. Season generously with salt and black pepper. Garnish with fresh herbs if desired.

Notes

  • For extra creaminess, use Yukon Gold potatoes; for fluffier texture, use russets.
  • These can be made ahead and reheated gently with a splash of cream.
