- 3 lbs russet or Yukon Gold potatoes, peeled and cut into chunks
- 1 head garlic
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- ¾ cup heavy cream (or half-and-half)
- Salt, to taste
- Freshly ground black pepper, to taste
- Optional: chopped fresh chives or parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30–35 minutes until cloves are soft and golden.
- Meanwhile, place potatoes in a large pot of salted water. Bring to a boil and cook 15–20 minutes, until fork-tender. Drain well.
- In a saucepan, warm the butter and cream over low heat until melted and heated through.
- Squeeze the roasted garlic cloves from their skins and mash them into the potatoes.
- Use a potato masher or hand mixer to mash potatoes, slowly adding the warm cream-butter mixture until smooth and fluffy.
- Season generously with salt and black pepper. Garnish with fresh herbs if desired.
Notes
- For extra creaminess, use Yukon Gold potatoes; for fluffier texture, use russets.
- These can be made ahead and reheated gently with a splash of cream.
- For a tangy twist, stir in sour cream or cream cheese.
