Ingredients

  • 1 pound beef sirloin, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 4 cloves garlic, minced
  • ¼ cup butter
  • 2 teaspoons fresh thyme
  • Salt and pepper, to taste
  • Parmesan cheese, optional, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the baby potatoes by washing them and slicing them in half. Toss with salt, pepper, and olive oil.
  3. Chop the beef sirloin into bite-sized pieces.
  4. In a small bowl, melt the butter and mix in the minced garlic and thyme.
  5. Add the beef and potatoes to a bowl and pour over the garlic butter mixture, tossing to coat.
  6. Line a baking sheet with parchment paper and spread the beef and potato mixture evenly.
  7. Roast in the oven for 20–25 minutes, stirring halfway through.
  8. Check for doneness, broil for an additional 2–3 minutes if desired.
  9. Sprinkle with Parmesan cheese before serving.

Notes

Feel free to substitute flank steak or ribeye for the beef. For a vegetarian option, use mushrooms or tempeh instead of beef.
