- 1 pound beef sirloin, cut into bite-sized pieces
- 1 pound baby potatoes, halved
- 4 cloves garlic, minced
- ¼ cup butter
- 2 teaspoons fresh thyme
- Salt and pepper, to taste
- Parmesan cheese, optional, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the baby potatoes by washing them and slicing them in half. Toss with salt, pepper, and olive oil.
- Chop the beef sirloin into bite-sized pieces.
- In a small bowl, melt the butter and mix in the minced garlic and thyme.
- Add the beef and potatoes to a bowl and pour over the garlic butter mixture, tossing to coat.
- Line a baking sheet with parchment paper and spread the beef and potato mixture evenly.
- Roast in the oven for 20–25 minutes, stirring halfway through.
- Check for doneness, broil for an additional 2–3 minutes if desired.
- Sprinkle with Parmesan cheese before serving.
Notes
Feel free to substitute flank steak or ribeye for the beef. For a vegetarian option, use mushrooms or tempeh instead of beef.
