Ingredients
1 cup cooked quinoa (cooled)
1/2 cucumber, diced
1/2 cup cherry tomatoes or diced tomato
1/4 red onion, finely chopped
1/3 cup crumbled feta cheese
2 tbsp chopped fresh parsley
1 tbsp chopped fresh mint
Dressing
2 tbsp olive oil
Juice of 1 lemon
Salt & pepper to taste
Instructions
In a large bowl, combine quinoa, cucumber, tomatoes, red onion, feta, parsley, and mint.
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
Pour dressing over the salad and toss gently to combine.
Serve chilled or at room temperature.
