Description

Ingredients

  • 2 pounds small potatoes, halved
  • 1 pound green beans, trimmed
  • 1/4 cup Dijon mustard
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in a large pot of salted water until tender but firm, about 10-15 minutes.
  2. Cook the green beans by blanching them in boiling water for 2-3 minutes, then transfer to ice water.
  3. Make the dressing by whisking together Dijon mustard, red wine vinegar, and olive oil; season with salt and pepper.
  4. Combine the cooked potatoes and green beans in a mixing bowl; pour the dressing over and add chopped parsley and chives.
  5. Taste and adjust the seasoning as desired.
  6. Serve chilled or at room temperature.

Notes

This salad can be made in advance; just add fresh herbs right before serving for the best flavor.
