Ingredients

  • 4 large potatoes (Russet or Yukon Gold works best)
  • 1 large onion, sliced
  • 2 cups cream or sour cream
  • 1 cup grated cheese (Swiss or Gruyère)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the potatoes thoroughly and slice them into ¼ inch rounds.
  3. Heat the olive oil in a skillet, add onions, and sprinkle with salt—sauté until caramelized (15-20 minutes).
  4. Combine cream and half of the grated cheese in a bowl to create a cheese base.
  5. Layer potato slices in a greased baking dish, alternating with caramelized onions and cheese mixture.
  6. Cover with aluminum foil and bake for 45 minutes.
  7. Remove foil, sprinkle remaining cheese on top, and bake for an additional 15-20 minutes.
  8. Let it rest for 10 minutes before serving.
