Instructions
- Marinate the chicken: In a medium bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, smoked paprika, oregano, cumin, salt, black pepper, and cayenne. Whisk it together until well combined.
- Prepare the chicken thighs: Pat the chicken thighs dry with paper towels and place them into the marinade, ensuring they are generously coated.
- Preheat your grill or skillet: Prepare your grill or skillet on medium-high heat, oiling the grates to prevent sticking.
- Cook the chicken: Place the marinated chicken thighs on the grill or skillet, grilling for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
- Prepare the cucumber salad: Slice your Persian cucumbers and red onion thinly, then combine them with a pinch of salt, Greek yogurt, and chopped dill in a bowl.
- Plate your dish: Once the chicken is cooked, let it rest for a few minutes before slicing or serving whole alongside the cucumber salad.
