Ingredients

  • 3 tbsp oil
  • 1 small onion, chopped
  • 2 tbsp garlic paste or chopped garlic
  • 1 cup tomato purée
  • 250 g chicken cubes
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp red chili powder
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp mixed herbs
  • 1/2 cup onions (julienned)
  • 1/2 cup capsicum (julienned)
  • 1 cup milk
  • 1/2 cup cream
  • 1/2 cup mozzarella cheese
  • 1/2 cup cheddar cheese
  • 2 cups pasta

Instructions

  1. Prepare Your Ingredients: Measure out your ingredients before you start cooking.
  2. Cook the Pasta: In a large pot, bring salted water to a boil, add the pasta, and cook until al dente. Reserve 1/2 cup of pasta water, then drain.
  3. Sauté the Onions: In a large skillet, heat the oil over medium-high heat, add the onions, and cook until translucent, about 5 minutes.
  4. Add the Garlic: Stir in the garlic and cook for another 1-2 minutes.
  5. Incorporate the Chicken: Add chicken cubes, season with salt, paprika, red chili powder, oregano, garlic powder, and mixed herbs, and cook until browned, about 5-7 minutes.
  6. Build the Sauce: Pour in the tomato purée and simmer for about 3 minutes, then add milk and cream.
  7. Add the Veggies: Toss in the julienned onions and capsicum, cooking until tender, about 3-4 minutes.
  8. Combine Pasta & Sauce: Add the drained pasta to the skillet, toss to combine, and stir in cheeses.
  9. Taste and Adjust: Check seasoning and add more salt or spices if needed.
  10. Serve: Plate the Fajita Pasta and top with reserved cheese and fresh herbs if desired.
