Ingredients
1 3/4 cups all-purpose flour
1 cup sugar
1/2 cup brown sugar
1 teaspoon baking soda
2 teaspoons pumpkin pie spice
1/2 teaspoon salt
2 eggs
1 cup canned pumpkin purée
1/2 cup vegetable oil
1/4 cup milk
1 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C). Grease a 9×5 loaf pan or line with parchment.
In a large bowl, whisk flour, sugars, baking soda, spice, and salt.
Add eggs, pumpkin, oil, milk, and vanilla. Stir until just combined.
Pour into prepared pan and smooth the top.
Bake for 50–60 minutes, or until a toothpick comes out clean.
Cool in pan for 10 minutes, then transfer to a wire rack.
