Description

Easy one pot ‘fried’ rice is a quick, flavor-packed dish that brings the taste of takeout to your kitchen with minimal cleanup. Made with rice, veggies, eggs, and savory seasonings, it’s stir-fried-style comfort food cooked all in one pan.


Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 2 tbsp vegetable oil or sesame oil
  • 2 eggs, lightly beaten
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 green onions, chopped
  • 23 tbsp soy sauce
  • 1 tsp garlic powder or 1 clove garlic, minced
  • 1/2 tsp ground ginger (optional)
  • Salt and pepper, to taste
  • Optional: cooked chicken, shrimp, or tofu for added protein

Instructions

  1. Heat 1 tbsp oil in a large skillet or pot over medium heat. Add beaten eggs and scramble until fully cooked. Remove eggs from the pan and set aside.
  2. Add remaining oil to the pan. Stir in garlic and frozen veggies. Cook for 2–3 minutes until heated through.
  3. Add the rice, breaking up any clumps. Stir-fry with veggies for another 3–4 minutes until everything is hot.
  4. Return scrambled eggs to the pot. Stir in soy sauce, green onions, ginger (if using), and season with salt and pepper to taste.
  5. Cook for another 1–2 minutes, then remove from heat and serve warm.

Notes

  • Use cold, day-old rice for the best texture.
  • Customize with your favorite proteins or additional veggies.
  • Add a splash of toasted sesame oil at the end for extra flavor.
  • Great as a side dish or stand-alone meal.
