Ingredients
For the Chicken Marinade:
1½ lbs boneless, skinless chicken thighs or breasts
1/4 cup olive oil
3 cloves garlic, minced
Juice of 1 lemon
2 teaspoons dried oregano
1 teaspoon cumin
Salt and black pepper to taste
For the Tzatziki Sauce:
1 cup Greek yogurt
1/2 cucumber, grated and squeezed dry
1 garlic clove, minced
1 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon chopped fresh dill or mint
Salt to taste
To Serve:
Pita bread or flatbreads
Sliced tomatoes
Sliced red onion
Shredded lettuce
Feta cheese (optional)
Instructions
Marinate the Chicken:
In a bowl, mix olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper. Add chicken and toss to coat. Cover and marinate for at least 30 minutes, or up to 4 hours.
Make the Tzatziki:
Combine yogurt, grated cucumber, garlic, olive oil, lemon juice, dill, and salt in a bowl. Mix well and chill until ready to serve.
Cook the Chicken:
Grill or pan-sear marinated chicken over medium-high heat for 5–7 minutes per side until cooked through and golden. Let rest before slicing.
Assemble Gyros:
Warm pita bread, then layer with chicken, tzatziki, veggies, and feta if using. Wrap and enjoy!
