- 1 box Strawberry Cake Mix
- 1 cup Guava Nectar or Guava Juice
- 3 large Eggs (Room temperature)
- 1/2 cup Coconut Oil (Melted)
- 8 oz Cream Cheese (Room temperature)
- 1/2 cup Granulated Sugar
- 1 tsp Vanilla Extract
- 8 oz Cool Whip (Thawed)
- 2 1/2 cups Guava Nectar or Guava Juice (For glaze)
- 1/2 cup Granulated Sugar
- 2 tbsp Cornstarch
- 1/4 cup Water (For slurry)
- 1 cup Sweetened Coconut Flakes (For garnish)
Instructions
- Preheat your oven to 350°F (175°C) and prepare the pans.
- Mix the strawberry cake mix, guava nectar, eggs, and melted coconut oil until smooth.
- Divide the batter between the prepared pans and bake for 25-30 minutes.
- Cool the cakes in the pans for 10 minutes before transferring to a wire rack.
- Prepare the cream cheese frosting by beating cream cheese and sugar until smooth, then mix in vanilla and Cool Whip.
- Create the guava glaze by heating guava nectar, sugar, and cornstarch slurry until thickened.
- Assemble the cake by placing one layer on a plate, frosting it, and adding the second layer.
- Drizzle the guava glaze over the cake and garnish with coconut flakes.
Notes
This cake can be made ahead of time; store in the fridge and add glaze before serving.
