Ingredients
2 medium cucumbers (English or Kirby preferred)
4 oz smoked salmon
4 oz cream cheese, softened
2 tbsp fresh dill, finely chopped
1 tsp lemon zest
1 tbsp capers, drained
½ tsp freshly ground black pepper
Instructions
Wash cucumbers and slice into ½-inch thick rounds.
Pat slices dry thoroughly with paper towels to prevent sogginess.
Spread about 1 teaspoon of softened cream cheese onto each round.
Top with a small folded piece of smoked salmon.
Sprinkle evenly with lemon zest, dill, capers, and black pepper.
Arrange on a platter and chill for 10 minutes before serving to allow the cream cheese to firm slightly.
