Description

A delightful Crunchy Ramen Noodle Salad full of vibrant colors and flavors, perfect for warm evenings and potlucks.


Ingredients

  • 2 packages of ramen noodles
  • 4 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 cup slivered almonds
  • 1/2 cup green onions, sliced
  • 1/2 cup vegetable oil
  • 1/4 cup rice vinegar
  • 1/4 cup sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

Instructions

  1. Prep the ramen noodles: Boil water, cook noodles for 3-4 minutes, drain and rinse under cold water.
  2. Mix the dressing: Whisk vegetable oil, rice vinegar, sugar, soy sauce, and sesame oil in a bowl until smooth.
  3. Combine the veggies: Toss shredded cabbage, green onions, and carrots in a sizable serving bowl.
  4. Add the noodles: Gently fold in cooled ramen noodles, keeping them intact.
  5. Pour on the dressing: Drizzle dressing over and toss to coat the salad.
  6. Add almonds: Sprinkle slivered almonds and give a gentle toss.
  7. Set to chill: Refrigerate for at least 30 minutes before serving.

Notes

Feel free to customize with additional veggies or proteins. For a spice kick, add sriracha to the dressing.
