- 1 lb Boneless Chicken Breast (or Thighs)
- 4 Cups Low-Sodium Chicken Broth (or Vegetable Broth)
- 2 Cups Mixed Vegetables (carrots, celery, peas)
- 1 Medium Onion, Diced
- 3 Cloves Garlic, Minced
- 1 tsp Dried Parsley (or 1 tbsp Fresh Parsley)
- Salt & Pepper to Taste
- 2 Cups Cooked Pasta (or Rice, Optional)
Instructions
- Prep the ingredients by gathering everything you need and chopping your veggies.
- Sauté the aromatics in olive oil until soft, if desired.
- Load the crockpot with the sautéed onion and garlic, chicken, mixed veggies, broth, parsley, and seasoning.
- Check on the soup midway through and adjust seasoning if needed.
- Shred the chicken after cooking and return it to the soup.
- Add pasta or rice during the last 30 minutes of cooking if desired.
- Serve the soup hot, topped with fresh parsley.
Notes
The soup can be frozen for up to three months. Experiment with ingredient substitutes and additions to make it your own.
