Ingredients

  • 1 lb Boneless Chicken Breast (or Thighs)
  • 4 Cups Low-Sodium Chicken Broth (or Vegetable Broth)
  • 2 Cups Mixed Vegetables (carrots, celery, peas)
  • 1 Medium Onion, Diced
  • 3 Cloves Garlic, Minced
  • 1 tsp Dried Parsley (or 1 tbsp Fresh Parsley)
  • Salt & Pepper to Taste
  • 2 Cups Cooked Pasta (or Rice, Optional)

Instructions

  1. Prep the ingredients by gathering everything you need and chopping your veggies.
  2. Sauté the aromatics in olive oil until soft, if desired.
  3. Load the crockpot with the sautéed onion and garlic, chicken, mixed veggies, broth, parsley, and seasoning.
  4. Check on the soup midway through and adjust seasoning if needed.
  5. Shred the chicken after cooking and return it to the soup.
  6. Add pasta or rice during the last 30 minutes of cooking if desired.
  7. Serve the soup hot, topped with fresh parsley.

Notes
