- 3–4 pounds Beef Chuck Roast
- 4 cups Beef Broth
- 2 Onions, sliced
- 4 cloves Garlic, minced
- 2 tablespoons Worcestershire Sauce
- 1 teaspoon Dried Thyme
- Black Pepper, to taste
- Crusty Rolls or Hoagie Buns, for serving
- Provolone or Swiss Cheese, optional
Instructions
- Prepare the beef by seasoning the chuck roast with salt and pepper; optionally sear it in a hot skillet until browned.
- Layer the sliced onions in the crockpot and place the beef chuck roast on top.
- Mix together the beef broth, minced garlic, Worcestershire sauce, and thyme in a bowl and pour over the beef.
- Set the crockpot to low for 8 hours or high for 4 hours.
- Shred the beef using two forks once cooked and return to the broth.
- Prepare the rolls by toasting them in the oven at 350°F for 5-7 minutes.
- Assemble sandwiches by loading the toasted rolls with the shredded beef and drizzle with au jus.
- Serve with ladled au jus for dipping.
Notes
Feel free to experiment with different broths and add garlic for extra flavor. Serve with fries or a salad.
