Description

Crockpot Cheesy Potatoes are a creamy, cheesy, and comforting side dish that’s perfect for holidays, potlucks, or weeknight dinners. Made with simple ingredients and slow-cooked to perfection, they’re always a hit.


Ingredients

  • 1 (32 oz) bag frozen diced hash browns
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped onion
  • 1/4 cup melted butter
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • Optional: chopped parsley or green onions for garnish

Instructions

  1. Spray the inside of a crockpot with non-stick cooking spray.
  2. In a large bowl, mix together the cream of chicken soup, sour cream, melted butter, garlic powder, salt, and pepper.
  3. Stir in the chopped onion, shredded cheddar, and frozen hash browns until well combined.
  4. Transfer the mixture to the crockpot and spread evenly.
  5. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until hot and bubbly.
  6. Stir before serving and garnish with chopped parsley or green onions, if desired.

Notes

  • Use cream of mushroom soup for a vegetarian version.
  • Stir halfway through cooking if possible for even heating.
  • Add cooked bacon bits or diced ham for extra flavor.
  • Top with extra cheese during the last 15 minutes for a melty finish.
  • Store leftovers in the fridge for up to 4 days.
