This cozy dish is a one-pot wonder, combining juicy chicken, savory stuffing, and creamy sauce with a side of green beans for balance. The first time I made it, it brought the feeling of a holiday dinner to an ordinary weekday. Easy, hearty, and so satisfying.
Ingredients
4 boneless, skinless chicken breasts
1½ tbsp Italian seasoning
Salt & pepper, to taste
10.5 oz can cream of chicken soup (low sodium)
8 oz sour cream (1 cup)
6 oz box stuffing mix
¾ cup low sodium chicken broth
2 cups fresh green beans, trimmed
Optional Add-ins for Stuffing:
½ cup diced onions
½ cup diced celery
¼ cup dried cranberries
½ cup cooked crumbled sausage
2 tsp dry rosemary
Instructions
Season Chicken: Sprinkle chicken breasts with Italian seasoning, salt, and pepper. Place in the bottom of the crock pot.
Make Creamy Sauce: In a bowl, mix cream of chicken soup and sour cream. Spread over the chicken.
Add Stuffing Mix: In a separate bowl, combine stuffing mix with chicken broth and any optional add-ins. Spoon over the creamy mixture.
Top with Green Beans: Layer green beans on top or around the edges.
Cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender.
