Ingredients
2 lbs boneless, skinless chicken breasts or thighs
2 cups long-grain rice (uncooked)
2 cups low-sodium chicken broth
1 cup water
1 tsp garlic powder
1 tsp onion powder
½ tsp salt (or to taste)
½ tsp black pepper
4 cups fresh or frozen broccoli florets
1½ cups shredded cheddar cheese (plus extra for topping)
¼ cup grated Parmesan cheese (optional, for extra flavor)
Instructions
Layer the Base: Place chicken at the bottom of the slow cooker. Season with garlic powder, onion powder, salt, and pepper.
Add Rice & Liquids: Pour in rice, chicken broth, and water—do not stir.
Cook First Phase: Cover and cook on LOW for 4 hours or HIGH for 2½–3 hours.
Add Broccoli: Stir in broccoli florets, then sprinkle with cheddar and Parmesan. Cover and cook on HIGH for another 20–30 minutes, until cheese melts and broccoli is tender.
Shred Chicken & Stir: Shred the chicken directly in the crock pot and stir everything together until creamy and cheesy.
