- 1 lb large shrimp (peeled, deveined, tails off)
- ½ cup buttermilk
- ¾ cup cornstarch
- ¼ cup all-purpose flour
- 1 tsp garlic powder
- ½ tsp salt
- Oil for frying
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 1–2 tsp sriracha (optional, for extra heat)
Instructions
- In a bowl, soak shrimp in buttermilk for 15-20 minutes.
- In a separate bowl, combine cornstarch, flour, garlic powder, and salt.
- Heat oil in a deep skillet or fryer to 350°F (175°C).
- Remove shrimp from buttermilk, letting excess drip off, then dredge in the cornstarch mixture, pressing to coat thoroughly.
- Fry shrimp in batches for 2-3 minutes or until golden and crispy. Drain on paper towels.
- In a small bowl, mix mayonnaise, sweet chili sauce, and sriracha (if using) until smooth to make bang bang sauce.
- Toss fried shrimp in bang bang sauce until evenly coated.
- Serve immediately as an appetizer, over rice, or in tacos.
