- 2 cups cauliflower florets
- 2 cups broccoli florets
- 2 cups carrots, sliced
- 1 cup shredded cheddar cheese
- 1 cup milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 cup breadcrumbs (optional for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- Bring salted water to a boil in a large pot and add cauliflower, broccoli, and sliced carrots. Simmer for about 3-5 minutes until tender but crisp. Drain and set aside.
- Melt the butter in a medium saucepan over medium heat. Add flour and whisk continuously until light golden.
- Slowly pour in the milk while whisking to prevent lumps. Keep whisking until the mixture thickens, about 2-3 minutes.
- Stir in salt, pepper, garlic powder, onion powder, and fold in shredded cheddar cheese.
- Combine the blanched vegetables with the creamy sauce in a large bowl and stir well.
- Pour the mixture into a greased baking dish. If using, sprinkle breadcrumbs on top.
- Bake for about 25-30 minutes until golden brown and bubbling.
- Let it cool for 5 minutes before serving.
