Ingredients

  • 2 cups cauliflower florets
  • 2 cups broccoli florets
  • 2 cups carrots, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Bring salted water to a boil in a large pot and add cauliflower, broccoli, and sliced carrots. Simmer for about 3-5 minutes until tender but crisp. Drain and set aside.
  3. Melt the butter in a medium saucepan over medium heat. Add flour and whisk continuously until light golden.
  4. Slowly pour in the milk while whisking to prevent lumps. Keep whisking until the mixture thickens, about 2-3 minutes.
  5. Stir in salt, pepper, garlic powder, onion powder, and fold in shredded cheddar cheese.
  6. Combine the blanched vegetables with the creamy sauce in a large bowl and stir well.
  7. Pour the mixture into a greased baking dish. If using, sprinkle breadcrumbs on top.
  8. Bake for about 25-30 minutes until golden brown and bubbling.
  9. Let it cool for 5 minutes before serving.
