Ingredients
- Olive Oil: 2 tablespoons
- Onion: 1 medium, finely chopped
- Garlic: 3 cloves, minced
- Carrots: 2 medium, diced
- Spinach: 4 cups, fresh
- Italian Sausage: 1 pound
- Chicken Broth: 6 cups
- Cream Cheese: 8 ounces, cubed
- Shredded Mozzarella Cheese: 2 cups
- Parmesan Cheese: 1 cup, grated
- Dried Italian Herbs: 2 teaspoons

Instructions
- Heat the Olive Oil in a large pot over medium heat, and warm for about 30 seconds before adding chopped onions. Cook until translucent, about 5 minutes.

- Let the soup simmer for an additional 10-15 minutes to meld flavors.
- Serve hot in comforting bowls, garnished with extra cheese or fresh herbs.
