- 3 cups shredded chicken
- 8 flour tortillas
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 can (4 oz) green chiles
- 2 cups shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1 onion, chopped (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine shredded chicken, cream of chicken soup, sour cream, green chiles, garlic powder, cumin, and half of the cheese. Stir until well combined.
- Warm tortillas in the microwave for about 20 seconds until soft.
- Spoon a generous amount of the chicken mixture onto a tortilla, roll tightly, and place seam-side down in a greased baking dish.
- In a separate bowl, mix remaining cream of chicken soup, a dollop of sour cream, and a splash of water or chicken broth. Pour over enchiladas.
- Sprinkle remaining cheese over the top.
- Bake for 25-30 minutes until cheese is melted and bubbly.
- Let sit for 5 minutes before serving.
Notes
Garnish with fresh cilantro or green onions for added flavor. Serve with Mexican rice or refried beans for a complete meal.
