Ingredients

  • 3 cups shredded chicken
  • 8 flour tortillas
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 can (4 oz) green chiles
  • 2 cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1 onion, chopped (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken, cream of chicken soup, sour cream, green chiles, garlic powder, cumin, and half of the cheese. Stir until well combined.
  3. Warm tortillas in the microwave for about 20 seconds until soft.
  4. Spoon a generous amount of the chicken mixture onto a tortilla, roll tightly, and place seam-side down in a greased baking dish.
  5. In a separate bowl, mix remaining cream of chicken soup, a dollop of sour cream, and a splash of water or chicken broth. Pour over enchiladas.
  6. Sprinkle remaining cheese over the top.
  7. Bake for 25-30 minutes until cheese is melted and bubbly.
  8. Let sit for 5 minutes before serving.

Notes

Garnish with fresh cilantro or green onions for added flavor. Serve with Mexican rice or refried beans for a complete meal.
