- 8 oz mushrooms, sliced
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Sauté the sliced mushrooms for about 5 minutes until tender and golden.
- Add the minced garlic and cook for another minute.
- Incorporate the chopped sun-dried tomatoes and sauté for 2-3 minutes.
- Pour in the heavy cream and stir gently.
- Add the fresh spinach and cook until it wilts down, about 2-3 minutes.
- Cheese it up by adding the grated Parmesan cheese and stir until melted, simmer for another 2-3 minutes.
- Serve and enjoy your creamy Tuscan mushrooms!
