- 3 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- ½ cup sun‑dried tomatoes (drained if oil‑packed, roughly chopped)
- 2 cups fresh baby spinach
- ½ tsp Italian seasoning
- Salt and black pepper, to taste
- Optional red pepper flakes (for heat)
Instructions
- Season both sides of the chicken breasts with salt, black pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium‑high heat. Add chicken and cook 4–6 minutes per side until golden and cooked through. Remove chicken from skillet and set aside.
- In the same skillet, reduce heat to medium and add butter. Once melted, add minced garlic and sauté until fragrant, about 30 seconds.
- Pour in chicken broth and scrape up any browned bits from the bottom of the pan.
- Stir in heavy cream, Parmesan cheese, and sun‑dried tomatoes. Simmer the sauce for 2–3 minutes until slightly thickened.
- Add fresh spinach to the sauce and cook until wilted.
- Return the cooked chicken to the skillet, spooning sauce over top. Simmer 2–3 more minutes to heat through and meld flavors.
- Serve immediately over pasta, rice, or with crusty bread.
