Description

Ingredients

  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, chopped
  • 4 cups vegetable broth (or chicken broth)
  • 1 teaspoon ground cumin
  • ½ teaspoon ground cinnamon
  • ½ teaspoon smoked paprika
  • 1 cup coconut milk (or heavy cream)
  • Salt and black pepper, to taste
  • Optional garnishes: pumpkin seeds, sour cream or yogurt swirl, fresh herbs

Instructions

  1. Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender and caramelized.
  2. In a large pot, heat remaining olive oil over medium heat. Add onion, garlic, and carrots; sauté until softened, about 5–7 minutes.
  3. Add roasted sweet potatoes, vegetable broth, cumin, cinnamon, and smoked paprika. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Use an immersion blender (or transfer to a blender in batches) to blend until smooth and creamy.
  5. Stir in coconut milk (or heavy cream) and adjust seasoning with salt and pepper.
  6. Serve hot, garnished with pumpkin seeds, a swirl of cream, or fresh herbs.
