  • 6 cups yellow squash (about 3 medium-sized squash)
  • ½ medium Vidalia onion (chopped)
  • 1 teaspoon salt
  • 1 egg (lightly beaten)
  • 4 ounces sharp cheddar cheese (1/2 cup shredded)
  • 2 ounces Gruyere (1/4 cup shredded)
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 teaspoon fresh thyme
  • ½ sleeve Ritz crackers
  • 2 tablespoons butter (for topping)
  • 2 tablespoons Parmesan cheese (finely grated)
  • 1 teaspoon parsley (chopped for garnish)

Instructions

  1. Prep your squash: Start by washing your yellow squashes. Slice the ends off and then cut them into thin rounds or half-moons (about 1/4-inch thick).
  2. Sauté the onion: In a large skillet over medium heat, melt 1 1/2 tablespoons of butter. Add the chopped Vidalia onion and a pinch of salt, sauté until translucent, about 3-4 minutes.
  3. Cook the squash: Add the sliced squash to the skillet with the onions. Stir and cook for about 5-7 minutes until the squash begins to soften.
  4. Make the creamy mixture: In a large bowl, whisk together the beaten egg, sour cream, mayonnaise, fresh thyme, sharp cheddar, and Gruyere until smooth and creamy.
  5. Combine ingredients: Once the squash is tender, add it to the creamy mixture and mix well until evenly coated.
  6. Prepare the casserole dish: Preheat your oven to 350°F (175°C) and grease a 9×13-inch casserole dish. Transfer the squash mixture into the dish, spreading it out evenly.
  7. Prepare the topping: Crush the Ritz crackers and mix with 2 tablespoons of melted butter and Parmesan cheese until sandy. Sprinkle over the squash mixture.
  8. Bake: Place the casserole in the oven and bake for 25-30 minutes until the top is golden brown and bubbly.
