Instructions

  1. Prepare the Spinach Puree: Blanch the fresh spinach leaves in boiling salted water for 2 minutes, then drain and rinse with cold water. Blend until smooth.
  2. Make the Roux: Warm olive oil in a saucepan, add flour, and whisk for about a minute.
  3. Add Milk: Continue whisking while gradually pouring in the milk until thickened, about 3-5 minutes.
  4. Incorporate the Spinach Puree: Fold the spinach puree into the thickened milk and adjust seasoning.
  5. Melt the Cheese: Add mozzarella cheese over low heat until melted.
  6. Cook the Pasta: Cook your pasta according to package instructions and reserve some pasta water.
  7. Combine: Toss the cooked pasta into the creamy sauce, adding reserved pasta water as needed to reach desired consistency.
  8. Plate: Serve immediately, garnished with fresh basil or parsley and a sprinkle of Parmesan cheese.
