- 12 ounces of pasta (spaghetti, fettuccine, or penne)
- 2 large red bell peppers, roasted and peeled
- 1 cup heavy cream
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Fresh basil, for garnish
- Burrata cheese, for topping
- Parmesan cheese, for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Place the red bell peppers on a baking sheet. Drizzle with olive oil and sprinkle with salt.
- Roast for about 25-30 minutes or until the skins are charred and blistered.
- While the peppers roast, bring a large pot of salted water to a boil.
- Add your chosen pasta and cook according to package instructions until al dente.
- Once the peppers are roasted, let them cool slightly. Peel off the skins and remove the seeds.
- In a blender, combine the roasted peppers, heavy cream, garlic, salt, black pepper, and red pepper flakes (if using). Blend until smooth.
- Add the blended sauce to a large skillet over medium heat and allow it to come to a gentle simmer.
- Add the cooked pasta directly into the sauce, stirring to coat, and adjust the consistency with reserved pasta water as needed.
- Plate your creamy red pepper pasta and spoon on the burrata. Garnish with fresh basil and a sprinkle of parmesan cheese.
Notes
For an impressive presentation, swirl the pasta on the plate and place the burrata right in the center. Consider serving this dish with some crusty bread.
