A deliciously comforting low-carb casserole with tender chicken, delightful broccoli, and crispy bacon in a luscious creamy sauce.


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 2 cups broccoli florets
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the broccoli by chopping into small florets and blanching in boiling water for 2-3 minutes. Drain and set aside.
  3. Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels.
  4. Sauté the chicken in the same skillet with garlic powder, onion powder, salt, and pepper.
  5. Make the cream sauce by pouring in the heavy cream and adding half the shredded cheese until melted and bubbling.
  6. Combine the chicken mix with blanched broccoli and half of the crumbled bacon in a large bowl.
  7. Transfer the mixture to a greased 9×13-inch casserole dish.
  8. Top with the remaining cheese and bacon.
  9. Bake for 30-35 minutes until bubbly and golden.
  10. Cool for a few minutes before serving.

Notes

For added flavor, consider using flavored oils for sautéing or adding more vegetables. This dish freezes well before baking.
