Description

A satisfying creamy casserole made with chicken, broccoli, and turkey bacon that’s low in carbs and high in flavor!


Ingredients

  • 5 cups broccoli florets
  • 8 slices cooked turkey bacon, chopped
  • 4 cups cooked chicken, shredded or diced
  • 3 cloves garlic, minced
  • ½ cup shredded mozzarella
  • ½ cup shredded cheddar
  • 1 cup ranch dressing
  • ½ cup shredded cheddar (for topping)
  • ½ cup shredded mozzarella (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the broccoli by blanching it in a large pot of lightly salted boiling water for 2-3 minutes. Drain and rinse under cold water.
  3. Cook the turkey bacon in a skillet over medium heat for 6-8 minutes until crispy. Chop it and set aside.
  4. Mix together the cooked chicken, blanched broccoli, minced garlic, chopped bacon, mozzarella, and cheddar cheese in a large mixing bowl. Drizzle ranch dressing over it and mix until evenly coated.
  5. Assemble the mixture in a greased 9×13-inch baking dish, spreading it out evenly.
  6. Add the remaining mozzarella and cheddar cheese on top.
  7. Bake the casserole for about 25-30 minutes until the cheese is bubbly and golden.
  8. Serve and enjoy after letting it sit for 10 minutes.

Top with fresh herbs like parsley or chives, and serve with a light salad or roasted veggies.
