  • 1/2 cup breadcrumbs

  • 1 egg
  • 2 cloves garlic, minced

  • Salt and pepper to taste
  • 6 cups chicken or vegetable broth
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream
  • 1 cup small pasta (like ditalini or orzo)
  • Fresh basil or parsley for garnish

Instructions

  1. Make the Meatballs: In a large bowl, combine the ground beef (or turkey), breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, and a generous sprinkle of salt and pepper. Mix with your hands until everything is just combined. Form 1-inch meatballs and set them aside.
  2. Brown the Meatballs: In a large pot or Dutch oven, heat a drizzle of olive oil over medium-high heat. Working in batches, add the meatballs to the pot. Brown on all sides (about 3–4 minutes). Remove the meatballs and set aside.
  3. Sauté and Sizzle: In the same pot, add a splash more olive oil if needed. Add any leftover garlic. Then pour in your crushed tomatoes, followed by the chicken or vegetable broth.
  4. Simmer Time: Bring the mixture to a gentle boil and add the meatballs, followed by the small pasta. Reduce heat to low, cover, and let simmer for about 15 minutes until the pasta is al dente and the meatballs are fully cooked.
  5. Stir in the Cream: Once the pasta is cooked, slowly stir in the heavy cream and adjust seasoning to taste.
  6. Garnish and Serve: Ladle the soup into bowls and top with fresh basil or parsley.

Notes
