Description

A refreshing and creamy salad perfect for summer days, combining crisp cucumbers, tangy dressing, and fresh herbs.


Ingredients

  • 2 English cucumbers
  • ⅓ cup thinly sliced red onion
  • ½ cup sour cream
  • 3 tablespoons chopped fresh dill
  • 2 tablespoons mayonnaise
  • 2 tablespoons white wine vinegar
  • Zest and juice of 1 lemon
  • 1 clove garlic, grated
  • 1 teaspoon monk fruit/allulose
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Prepare the cucumbers by washing and slicing them into thin rounds.
  2. Slice the red onion thinly to avoid big pieces dominating the salad.
  3. Mix the dressing in a large bowl with sour cream, mayonnaise, lemon juice, lemon zest, garlic, white wine vinegar, monk fruit/allulose, salt, and pepper.
  4. Combine the sliced cucumbers and red onions with the dressing.
  5. Add the freshly chopped dill and gently stir to distribute.
  6. Chill the salad in the refrigerator for at least 20-30 minutes to meld flavors.
  7. Serve the salad chilled in a serving bowl.

Notes

This salad is great as a side dish for BBQs and picnics. It can be made ahead of time for improved flavor.
