- 1 lb boneless, skinless chicken breasts
- 12 oz bowtie (farfalle) pasta
- 2 cups broccoli florets
- 1 tsp Cajun seasoning
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- 1/2 tsp crushed red pepper flakes (optional)
- 1 tsp Dijon mustard
- Juice and zest of 1 lemon
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 2 tbsp olive oil
- 6 tbsp unsalted butter
- 1/2 cup grated Parmesan cheese
- 1/2 cup reserved pasta water
Instructions
- Cook the Pasta: Bring a large pot of salted water to boil. Add the bowtie pasta and cook until al dente (8-10 minutes). Reserve 1 cup of pasta water before draining.
- Sauté the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken pieces seasoned with Cajun seasoning, garlic powder, and smoked paprika. Cook for 5-7 minutes until golden and cooked through.
- Add Broccoli: Stir in broccoli florets and cook for another 3-4 minutes until bright green and tender-crisp.
- Prepare the Cowboy Butter Sauce: Lower heat and add butter, Dijon mustard, garlic, crushed red pepper flakes, lemon juice, and zest. Stir until combined.
- Combine Pasta and Sauce: Drain pasta and toss it into the skillet with the chicken and broccoli. Mix well, adding reserved pasta water as needed.
- Cheese It Up: Mix in grated Parmesan cheese until melted and well combined.
- Finish with Fresh Herbs: Fold in chopped parsley and chives gently.
